Sweet and savory chicken thighs pair perfectly with this crunch slaw. This packaged slaw is made from the stems of broccoli!

We Provide
  • 1 Lbs Chicken Thighs
  • 4 Tablespoons Apricot Jam
  • 1 Tablespoon Dried Rosemary
  • 8 Oz. Broccoli Slaw
  • 1 Oz. Dried Apricots
  • 1 Oz. Slivered Almonds
  • 2 Tablespoon Mayonnaise
  • 3 Tablespoons Apple Cider Vinegar (2 for Slaw, 1 for Chicken)
You Provide
  • Salt and Pepper
  • Olive Oil
  • Small Sauce Bowl
  • Rimmed Baking Sheet
  • Cutting Board
  • Chefs Knife

Step 1


Preheat oven to 400 degrees. While that heats up combine apricot jam, 1 tablespoon apple cider vinegar, and 1 tablespoon of the dried rosemary in a small sauce bowl. Stir to combine.

Step 2


Place chicken thighs on rimmed baking sheet and season with salt and pepper on both sides. Place seasoned chicken smooth side down, and spoon on the seasoned apricot sauce evenly onto the chicken thighs.

Step 3


Place apricot chicken into hot oven and bake for 30 minutes.

Step 4


While the chicken bakes, make the slaw. Thinly slice the dried apricots and set aside.

Step 5


Place broccoli slaw into medium mixing bowl. Top with mayonnaise, 2 tablespoons apple cider vinegar, sliced apricots and slivered almonds. Toss to combine and season with salt and pepper to taste.

Step 6


To plate, create a bed with half of the broccoli slaw and top it with half of the glazed chicken thighs.
