The Blackberries become sweet and soft and are a perfect sauce for your pork. With a side of sautéed spinach seasoned with garlic and red pepper flakes, you will know it is spring!

  • 2, 5 Oz. Pork Chops
  • 3 Oz. Blackberries
  • 2 Tablespoons Balsamic Vinegar
  • 2 Bunch Spinach
  • 1 Clove Garlic
  • 1 Teaspoon Red Pepper Flakes

Step 1

Recipe #33 - Blackberry Pork and Sautéed Spinach 1

Preheat sauté pan over high heat with 1 teaspoon olive oil. While the pan heats, remove any excess fat and season pork with salt and pepper. Once the oil in the pan starts to smoke, reduce heat to medium and add seasoned pork. Cook for 3-4 minutes per side. While your pork prep the veggies.

Half each berry and set aside. Mince the garlic and set aside until you sauté the greens. Remove the tough stems from the spinach and set aside.

At the end of the 3-4 minutes, flip the pork and cook an additional 3-4 minutes. Once the pork is done, remove to a plate and let rest.

Place sauté pan on low heat and add blackberries. Cook for 1 minutes, until blackberries release their juice and the pan has a chance to cool down. Add balsamic vinegar, if pan is still too hot remove pan from heat and add vinegar and let bubble and reduce off the heat. Pour sauce over pork.

Rinse pan and place over medium heat and add 1 teaspoon olive oil, minced garlic and a pinch (or as much as you like) red pepper flakes. Once garlic becomes aromatic, add spinach and sauté for 2 minutes.

Once your greens are sautéed, place half on each plate and top with pork and blackberry sauce.
