Description

Fennel raw is crunchy and fresh, but braising it makes it buttery and creamy. This one pot wonder is elegant yet super simple.

We Provide
  • 2, 5 Oz. Chicken Breast
  • 2 Head Fennel
  • 1 Shallot
  • 1 Teaspoon Chicken Base
  • 1/8 Oz. Sprigs Thyme
  • 1 Tablespoon Butter
  • 2 Oz. Dried Apricots
You Provide
  • Chefs Knife
  • Cutting Board
  • Saute Pan
  • 1 Cup water
  • Olive Oil
  • Salt and pepper

Preheat sauté pan over high heat with 1 teaspoon olive oil. While the pan heats up, season chicken breasts with salt and pepper. Once the oil in the pan starts to smoke, turn heat down to medium and cook breasts for 3 minutes on both sides.

While chicken is browning, start prepping your veggies. Remove both ends of the fennel and cut into eights, leaving the cores intact. Make the chicken broth by adding 1 teaspoon chicken base to 1 cup hot water, stir until dissolved

Once the chicken has browned on one side for 3 minutes, flip and continue cooking another 3 minutes. While the chicken finishes browning, finely dice the shallot and set aside. Roughly chop the apricots and remove the thyme leaves from the stems.

Remove the chicken from the pan and add butter. Once butter is melted add shallots and thyme. Once shallots are translucent, add fennel, apricots, broth and chicken on top. Turn heat up to high until broth is boiling and cover with a lid, reduce heat to medium and braise for 15 minutes.

At the end of the 15 minutes, the broth should have reduced down and the fennel should be super tender. If the sauce is too thin, let reduce down without a lid. To plate, create a bed of the braised fennel and apricots and top with a chicken breast. Pour on any remaining juices over the top.
