While traditional burgers hold a place in all of our hearts, just a few adjustments can transform the traditional burger to a showstopper. By swapping out ground beef for a leaner buffalo, and nixing the bun all together, you can feel less guilty for topping it with bacon and some cheese.

We Provide
  • ½ Lb. ground buffalo
  • 2 Slices bacon
  • ½ Head red leaf lettuce
  • 1 Roma tomato
  • 1 Apple
  • 1 Oz.  mayonnaise
  • 1 Oz. blue cheese
  • ¼ Oz. tarragon
  • 1 Clove garlic
  • 1 Lemon
You Provide
  • Olive oil
  • Salt and pepper
  • 1 tablespoon water
  • Sauté pan
  • Small sauce bowl
  • Medium mixing bowl
  • Chefs knife
  • Cutting board

Step 1

Bun-less Buffalo Blue Cheese Burgers 1

Place bacon slices in cold sauté pan and place pan over medium heat. Cook for 5 minutes until bacon begins to brown and render out fat. While your bacon cooks, make the sauce.

Finely chop 1 clove garlic and tarragon, place in small sauce bowl, and mix with mayo, blue cheese, 1 tablespoon water, salt, pepper and the juice of ½ lemon.  Stir to combine and set aside.

Flip your bacon and continue cooking another 5 minutes over medium heat. While your bacon finishes, form your patties. Season the buffalo in a medium mixing bowl with salt and pepper and shape into patties, using your thumb to create a dent in the middle.

Remove cooked bacon onto plate and add your burger patties to your hot pan, draining off any excess grease but leaving enough to coat the pan. Cook for 4 minutes over medium heat. While your patties cook, finish prepping your burger fixings.

Thinly slice the apple and tomato. Quarter the red leaf lettuce, remove core and place ¼ on 2 plates. Get your plates ready for your patties by creating a bed of greens and top with sliced apples and tomatoes.

Step 6


Flip the burger patties over and continue cooking another 4 minutes.  Once your patties are done, place on top of your greens. Top your patties with the tarragon sauce and bacon.

      Hi Gerianne,

      The brand I use is Lodge. While you could easily find them online, you can also find these in abundance at thrift stores. Because they literally last forever with the right care, it can be a fun process to re-season a pan that was thrown away.
