Chickpeas, or garbanzos, are so versatile and a great pantry staple. This time they are dressed up like a traditional waldorf salad and served as a sandwich on brioche bread.

We Provide
  • 15 oz. Chickpeas
  • 2 Oz. Dried Cherries
  • 4 Oz. Walnuts
  • 4 Stalks Celery
  • 4 Oz. Mayonnaise
  • 1 Oz. Chives
  • ½ Head Lettuce
  • 1 Tablespoon Maple Syrup
  • 2 Tablespoons Apple Cider Vinegar
  • 2 Brioche Hamburger Buns
You Provide
  • Salt and Pepper
  • Medium Mixing Bowl
  • Cutting Board
  • Chefs Knife

Step 1


Rinse and strain chickpeas and place in medium mixing bowl. Use a fork to smash the chickpeas into chunks. Season with salt and pepper and set aside.

Step 2


Prep the rest of the ingredients. Roughly chop the cherries and walnuts. Add to the mixing bowl with chickpeas.

Step 3


Dice the celery by cutting it in half lengthwise first and then dicing it. Place into bowl.

Step 4


Finley chop the chives and add to the bowl. Add in the mayonnaise, maple syrup and apple cider vinegar to the bowl. Toss to combine and taste. Season with more salt and pepper if necessary.

Step 5


You can toast the brioche buns under the broiler for 3 minutes, or if you prefer you can serve it plain.

Step 6


To plate, place a few leafs of lettuce on your bun and top with half of the chickpea waldorf salad mixture. Place the top of the bun on and dinner is served.
