Step 1

Recipe 76 1

Poke the pork chops with a fork to allow that sauce to get into the chop.

Step 2

Recipe 76 2

Finely chop the chipotle in adobo sauce and 1 clove of garlic. Combine honey, chipotle and garlic together in a zip lock bag and smush to combine. Add pork to the bag and mush together the seasonings with the pork and let marinade.

Step 3

Recipe 76 3

While the pork marinades, peel the jicama and cut into slices and then into match sticks. Sprinkle with as much of the Tajin as you like and set aside. Roughly chop the cilantro and cut the lime into quarters. Set aside.

Step 4

Recipe 76 4

Preheat sauté pan over high heat with 1 tablespoon olive oil. Once the oil in the pan starts to smoke, reduce heat to medium and add pork. Cook for 3 minutes on each side.

Step 5

Recipe 76 5

While the pork cooks, seed and peel the avocado. Cut into chunks and squeeze the juice of ½ lime of the pieces. Set aside.

Step 6

Once pork is cooked through, its time to plate. Place half the pork on the plate and top with half the avocado and a sprinkle of fresh cilantro. Serve next to seasoned jicama.
