Perfectly cooked steak is something revered by all and unbelievably easy to do at home. Served next to roasted sugar snap peas with classic French herbs and salt, you have a dinner to impress that is a “snap” to put together.

We Provide
  • 2, 5 Oz Steak
  • 1 Lb. Sugar Snap Peas
  • ½ Oz. Marjoram
  • ½ Oz. Chives
  • 1 Teaspoon Maldon Salt
  • ½ Tablespoon Butter
  • 1 Lemon

Preheat broiler to high.

Preheat sauté pan over high heat with 1 teaspoon olive oil. While pan heats up, season steak with salt and pepper. Once oil in the pan starts to smoke, reduce heat to medium and cook 5 minutes. While steak cooks, prep your herbs.

Remove the tender leaves of the marjoram and roughly chop. Roughly chop the chives and set aside until you are ready to plate. Place sugar snap peas on rimmed sheet pan and remove the stem and tough string by snapping the stem off and pulling the string away from the pod. Season with olive oil and pepper

At the end of the 5 minutes, flip the steak sear the other side for 2 minutes.  At the end of the 2 minutes, place half of the butter on each steak and squeeze the juice of ½ lemon on and around the steak, cover with a lid and place in oven for 5 minutes. While your steak finishes, make the salad (refer to other cue card). Once steak is cooked, remove from heat and let rest for 2 minutes. While your steak rests, cook the sugar snap peas.

Place sugar snap peas under broiler for 2 minutes. Once sugar snap peas start to brown, but still crisp, remove from broiler and season with half your herbs and toss to combine and place half on each plate adding a pinch of the Maldon salt on top.

To plate, place steak next to sugar snap peas and sprinkle the remaining fresh chervil and chives on top of the steak and around the plate.
