Locally raised and grass fed ground beef is the star, but the kohlrabi may be just a tad more unusual. Served together, this meal is both rich and light all at once.

We Provide
  • 1/2 Lbs Ground Beef
  • 1 Kohlrabi
  • 1 Green Apple
  • 1 Avocado
  • 3 Tablespoons Tahini
  • 2 Oz. Raisins
  • 1 Lemon
  • ½ Oz. Parsley

  • Salt and Pepper
  • Olive Oil
  • Sauté Pan with lid
  • Medium Mixing bowl
  • Small Mixing Bowlb
  • Small sauce bowl

Step 1

Start by peeling the tough skin off the kohlrabi. Cut into thin slices, stack and cut into thin matchsticks and place into medium mixing bowl. Repeat this same process with the green apple into similar size and shape. Half the lemon and cover with the juice of ½ lemon. Roughly chop the parsley and set aside.

Preheat sauté pan over high heat with 1 tablespoon olive oil. While the pan heats up, place ground beef into small mixing bowl and season with salt, pepper and half the fresh parsley. Combine using your hands and then form into patties. Once the oil in the pan starts to smoke, reduce heat to medium and add in the patties. Cook for 4 minutes on each side.

While the patties cook, finish up your veggies. Dice the avocado and place into the mixing bowl with the other veggies. In a small sauce bowl, add tahini, juice of ½ lemon, 1 tablespoon water, a drizzle of olive oil and salt and pepper.

At this point the patties should be ready to flip. Flip the patties and continue cooking another 4 minutes. While the patties finish cooking, continue finishing your meal.

Add in the raisins and remaining parsley before topping everything with the tahini dressing. Toss to combine.

Step 6


To plate, place half of the kohlrabi and green apple mixture onto a plate and top with the patty.
