Description

Instant mash potatoes are the base for this quick dish. Fluffy gnocchi is paired with rich and creamy white beans. When making dough, add the flour in increments to avoid a tough dense dough.

We Provide
  • 1 Egg
  • 1 Cup Flour
  • ¾ Cup Potato Flakes
  • 1 Oz. Sun Dried Tomatoes
  • 4 Oz. Baby Spinach
  • 5 Oz. White Beans
  • 5 Oz. Shredded Parmesan Cheese

Fill large sauce pan ¾ full with water. Place over high heat, cover and bring to a boil. While that heats up make the gnocchi. Microwave ½ cup water for 1 minute. In medium mixing bowl season potato flakes with salt and pepper. And water and stir to combine, the mixture should be dry and crumbly. Once the potatoes are cool to touch, add egg and 1/3 cup flour.

Once mixture is combined, place onto a clean board and knead just until smooth. Being careful not to over mix. Once gnocchi dough is combined, divide into 4 sections. Roll out into a long rope about ¼ inch thick and then cut into dumplings. Use a fork to gently imprint ridges into each individual gnocchi.

Once the water is boiling, add gnocchi (in batches if needed to avoid crowding) and cook for 2 minutes, or until they float to the top. Once cooked through, use a slotted spoon to strain onto a plate until your sauce is ready.

While the gnocchi cook, preheat sauté pan over high heat with 2 tablespoons olive oil. As that heats, thinly slice the sun dried tomatoes. Add the cooked gnocchi into the hot pan and top with spinach. Brown on one side for 3 minutes over medium heat undisturbed. The residual heat will wilt the spinach.

Once browned, add in the white beans, sun dried tomatoes and parmesan cheese. You may need to add a tablespoon or two of the gnocchi cooking liquid to bring the sauce together.

Toss gently as both the gnocchi and white beans are tender and break easily. Serve next to your side salad.
