A deviation from the usual protein and veggie, this pasta dish shares the stage with cauliflower. This power house veggie, when roasted, turns into an entirely new dish.

We Provide
  • 5 Slices Bacon
  • 4 Oz. Linguini
  • 1 Head Cauliflower
  • 2 Cloves Garlic
  • 6 Tablespoons Half and Half
  • 1 Lemon
  • 1 Oz. Sun Dried Tomatoes
  • ½ Oz. Italian Parsley

Step 1

Preheat oven to 450 degrees. Fill the sauce pan ¾ full, cover and place over high heat. Bring to a boil. While that heats up, place bacon into cold sauté pan and place over high heat. Once things start to sizzle, reduce heat to medium and cook for 5 minutes on both sides.

While the bacon cooks, cut the cauliflower into bite sized pieces and place on rimmed baking sheet. Coat in olive oil, season with salt and pepper and toss to combine. Place into hot oven and roast for 20 minutes.

Thinly slice the garlic and sun dried tomatoes. Once the water has come to a boil, season with salt and add in the linguini. Cook for 10 minutes or until the pasta is cooked through but still slightly firm in the middle. Reserve some of the cooking liquid when draining. Roughly chop the parsley. Cut the lemon in half and set aside.

Once the bacon has browned and cooked through, remove from pan and drain off excess oil. Turn off heat an add in the sliced garlic and sun dried tomatoes and fry until fragrant but not burnt ~1 minute. While the garlic browns, roughly chop the crisp bacon.

Turn heat back on to low and add the half and half to the pan. Add in roasted cauliflower, cooked pasta and crisp bacon. Squeeze the juice of half the lemon on top and toss to combine adding some of the pasta cooking liquid to loosen the sauce. The pasta should be on the dry side but still loose enough to toss.

Step 6


Add half of the pasta to a bowl and top with a heavy pinch of chopped parsley. Serve with a lemon quarter.
