These cute little mini yams cook up quick! Loaded with traditional TexMex flavors like black beans for added protein, this is a great Pantry staple.

We Provide
  • 3 Small Yams
  • ¼ Red Onion
  • 6 Oz. Black Beans
  • ½ Oz. Cilantro
  • 1 Chipotle in Adobo
  • 2 Oz. Mayonnaise
  • 2 Oz. Greek Yogurt
  • 2 Oz. Green Salsa
  • 2 Oz. Shredded Cheese Blend
You Provide
  • Salt and Pepper
  • Olive Oil
  • Cutting Board
  • Chefs Knife
  • 2 Sauce Bowls

Step 1


Use a fork to pierce the yams all over. Microwave them on high for 10 minutes or until very soft.

Step 2


While the yams cook, make the chipotle sauce. Finely dice the chipotle and add it to a small sauce bowl. Cover with the mayonnaise and Greek yogurt. Stir to combine and set aside.

Step 3


Prep the veggies by finely dicing the red onion and roughly chopping the cilantro. Once the yams are cooked through remove from the microwave and cut them into half length wise. Place black beans in a small sauce bowl and microwave them until warmed through.

Step 4


While the yams are still hot, top with shredded cheese and allow to melt. Once the beans are heated, evenly distribute them amongst the halved cheesy yams.

Step 5


Finish loading your yams by layering on the green salsa, diced red onions and a hearty drizzle of the chipotle sauce.

Step 6


Finish plating by topping with a big pinch of fresh cilantro.
