  • 1 Teaspoon Cumin
  • 1 Teaspoon Paprika
  • ½ C. Quinoa
  • 2 Carrots
  • 1 lemon
  • 1 Oz. Raisins
  • 1 Tablespoon Honey
  • 1 Oz. Almonds
  • 1/8 Oz. Parsley
  • 1/8 Oz. Cilantro

Step 1

Add 1 C. water to small sauce pan and place over high heat, cover with a lid and bring to a boil. Preheat the broiler to high. While your oven heats up and your water comes to a boil, rinse the quinoa under cold water with a wire strainer (with a mesh fine enough to contain the quinoa).  Once the water is boiling, add quinoa, cover with a lid and steam over low heat for 15 minutes.

While the quinoa cooks, prep the lamb. Combine cumin and paprika together with a big pinch of salt and fresh pepper to create a spice rub. Place lamb cubes onto a rimmed baking sheet and season evenly with spice rub. Place under broiler, top rack, for 10 minutes.

While the quinoa and lamb continue to cook, prep the salad. Peel the carrots with a vegetable peeler. Discard skin, and using the same vegetable peeler, create long ribbons, rotating the carrot as you get closer to the core. Place carrot ribbons in large salad bowl. Add in 1 tablespoon olive oil, juice of 1 lemon and honey. Stir to combine and set aside.

Prep the fresh parsley and cilantro, by roughly chopping them. Add fresh herbs to carrots, saving a few pinches for final plating. Add in raisins and almonds.

At the end of the 10 minutes remove the lamb from the oven and let rest on a cool plate. Once the quinoa has cooked, remove from heat and let cool with the lid off. Just before the lamb is done, add quinoa to salad bowl with carrots and dressing. Toss to combine.

Step 6


To plate, create a bed of the quinoa and carrot ribbons, and top with lamb cubes. Garnish with a few pinches of fresh herbs and dinner is served!
