Description

So not everyone has a grill, so we wrote this recipe assuming that. But if you do, take these outside! They are great with a char for the grill. Paired with creamy ricotta cheese this meal has a richness along with the freshness that is perfect for spring and summer.

We Provide
  • 1 Yellow Squash
  • 1 Zucchini Squash
  • 1 Cup Orzo (7 0z)
  • ½ Oz. Basil
  • 1 Oz. Shaved Parmesan
  • 1 Tablespoons Lemon Olive Oil
  • ½ Cup Ricotta Cheese (4 oz)
  • 1 Lemon
You Provide
  • Salt and Pepper
  • Olive Oil
  • Sauce Pan
  • Cutting Board
  • Rimmed Baking Sheet
  • Chefs Knife

Step 1

Fill the sauce pan ¾ full with water and bring to a boil. While that heats up, slice the squash into ¼ inch ovals. Set aside. Once boiling, season with salt and add the orzo and cook for 7 minutes.

While the orzo and squash cook, thinly slice the basil. Layer the leaves ontop of each other, roll them up and run your knife through it for a thin slice. Pick out any stems and set aside. Zest half the lemon and set aside.

Once the orzo has cooked and is tender, strain off remaining liquid and place back in warm pan. Season with lemon zest and ricotta. Toss to combine until creamy.

Once the squash has cooked and become charred, remove from oven. Squeeze the juice of half the lemon to top while still hot.

To plate, create a thin layer with the creamy orzo and top with a pinch of basil and parmesan cheese. Lay ontop the roasted squash alternating between yellow and green. To finish, top with another pinch of basil, parmesan, and a drizzle of lemon olive oil.
