Step 1

recipe141_1Preheat oven to 425 degrees. Cut the yams into ¼ inch rounds. Place into the medium mixing bowl and top with 2 tablespoons olive oil. Toss to combine until coated in oil. Season with Dry BBQ seasoning and toss until all the rounds are evenly seasoned.

Step 2

recipe141_2Arrange seasoned yams on the rimmed baking sheet and cook for 20 minutes.

Step 3

recipe141_3Combine BBQ sauce and rice wine vinegar in small sauce pan. Place over medium heat and bring to a simmer. Slice the peaches and place into sauce pan. Cook over medium heat until the sauce thickens and the peaches soften or about 10 minutes.

Step 4

recipe141_4Cook the chops by preheating your sauté pan over high heat with 1 tablespoon olive oil. While that heats up, season the pork chop with salt and pepper. Once the oil has started to smoke, reduce heat to medium and add in the chops. Cook for 4 minutes on each side.

Step 5

recipe141_5Once the yams have cooked through and taken on some color. Remove them from the oven and arrange onto your plate.

Step 6
