Description

Masa and cheese holds together the fresh veggies and adds some upmh. All neatly packed into a cute little pepper!

We Provide
  • 2 Poblano Peppers
  • 1 Ear Corn
  • 1 Yellow Squash
  • 1 Portobello Mushroom
  • 1 Oz. Shredded Parmesan
  • 1 Oz. shredded Mozzarella
  • 1 Oz. Mayonnaise
  • 2 Tablespoon Maseca
You Provide

Step 1

recipev43_1Preheat your broiler to high and place rack closest to heat. Place Poblano peppers, on sheet tray and place under high heat. Broil for 8 minutes on one side.

Step 2

recipev43_2While that heats up, dice the yellow squash and mushroom. Preheat sauté pan over high heat with 1 tablespoon olive oil. Once smoking, add squash and mushroom to pan. Cook for 3 minutes over high heat.

Step 3

recipev43_3While the veggies cook, remove the corn kernels from the cob. Once the veggies have cooked for 3 minutes, add in the corn kernels and reduce heat to medium. Season with salt and pepper and cook over medium heat for 2 minutes.

Step 4

recipev43_4Once the Poblano peppers have broiled for 8 minutes remove from heat. Let cool while your filling finishes cooking. Once your filling has cooked for 5 minutes total, add in the maseca and stir to combine. Add 1/3 Cup water into pan and stir to combine until evaporated.

Step 5

recipev43_5To finish the filling, remove from heat and add in the parmesan cheese and mayonnaise. Stir to combine and set aside while you finish the peppers.

Step 6

recipev43_thmbPeel the Poblano peppers and remove the seeds but cutting a slit into the top. Place back on the rimmed baking sheet. Fill the peppers evenly with the veggie mixture. Top with mozzarella and place back under the broiler for 2 minutes, or until the cheese is melty. Serve next to side salad and dinner is served.
