Shredded fresh veggies add a nice contrast to the thick linguini noodles. All wrapped in a tangy peanut butter sauce, this quick meal is beautiful and satisfying!

We Provide
  • 2, 5 Oz. Boneless Skinless Chicken Breast
  • 5 Oz. Linguini Pasta
  • 2 Small Carrots
  • 1 Small Zucchini
  • 4 Oz. Peanut Butter
  • 3 Tablespoons Rice Wine Vinegar
  • 2 Tablespoons Soy Sauce
  • 2 Tablespoon Sriracha
  • 1 Lime

Step 1

Fill sauce pan ¾ full with water. Place over high heat, cover and bring to a boil. While that heats up, preheat your sauté pan over high heat with 1 tablespoon olive oil. While the sauté pan heats up, season the chicken breasts with salt and pepper.

Step 2

Once the oil in the sauté pan starts to smoke, reduce heat to medium and add in seasoned chicken breast. Cook for 4 minutes on each side. While the chicken cooks, prep your veggies. Shred the carrots and zucchini with the box grater into the large mixing bowl.

Step 3

Once the water in the sauce pan comes to a boil, season with salt. Add the pasta and cook for 8 minutes, stirring occasionally. Once the chicken has cooked for 4 minutes on one side, flip and cook an additional 4 minutes on the other side. While the chicken, and pasta, finishes cooking make the sauce.

Step 4

Place peanut butter into small sauce bowl and microwave for 30 seconds to soften. Add in the rice wine vinegar, soy sauce, sriracha and juice of half a lime. Stir to combine and add more lime, or water depending on how tangy you want it, if its too thick.

Step 5

Once the chicken has cooked through remove from heat. Let rest and then cut into thin strips. Once the pasta has cooked through, strain and place on top of the shredded veggies. Add the peanut butter sauce on top and toss to combine, allowing the heat from the noodles to soften the veggies and make the sauce smooth.

Step 6

To plate, create a bed with the peanut butter noodles and top with the sliced chicken breast.
