Step 1

Recipe 54 1

Preheat sauté pan over high heat with 1 tablespoon olive oil. While your pan heats up, season pork chops with salt, pepper and dried basil.

Step 2

Recipe 54 2

Once the oil in the pan starts to smoke, reduce heat to medium and add in pork chops. Cook for 3 minutes on each side.

Step 3

Recipe 54 3

While the pork chops cook, thinly slice the yellow squash into coins. The thinner you cut them, the faster they cook.

Step 4

Recipe 54 4

Once the pork has cooked on one side for 3 minutes, flip and continue cooking an additional 3 minutes. Roughly chop the sun dried tomatoes and set aside. Finely chop or press the garlic and set aside.

Step 5

Recipe 54 5

Once the pork chops are cooked through, remove onto a plate and let rest. Add another 1 tablespoon olive oil to the hot pan and add in the squash, garlic and sun dried tomatoes. Season with salt and pepper and sauté over medium heat for 5 minutes, or until softened. Stir frequently to ensure even cooking.

Step 6

At the end of the 5 minutes, top with Parmesan cheese and you are ready to plate. Place half the squash onto a plate and top with the pork chops.
